Err... what about rocks? I wanted for ages to make a rock adoptable site, but never got around to it.

Other ideas;

frogs,
fluff-balls
aliens,
cats,
"unknown creatures" - create a great number of stages where the creature evolves or changes dramatically each time.

That's all I've got off the top of my head.

If you did horses, you could try and make a few fictional breeds that are crosses of real breeds. I'm working on one now, Calluat, which is Friesian x Akhal-Teke x Kathiawari x Appaloosa. If you just mix a few breeds, you can get something really pretty out of them :)
