Its a way of sending and retrieving data from the server without reloading the page. Like here with MyBB the quick edit feature presents an edit box and then on submit it sends it off to the server...

Well yeah its 24/7 but its not so personal. To the support people your a number. With a smaller host the support people can get to know your needs a lot better and you are generally much more valued...
